In the Burkholder house, we have a fast and easy cheat for when we would really love to have a cinnamon roll for breakfast (or dinner for that matter), but wouldn't love to eat all those calories or spend the time baking. Here it is, our Burkholder "Poor Man's Cinnamon Roll":
Toast a slice of bread (we use Kirkland whole wheat 80 calories per slice)
Spread some butter
Sprinkle some cinnamon & sugar
Top with whipped cream cheese frosting (we use Betty Crocker, 2 TBS = 100 calories... & you don't need 2TBS!)
It comes out hot and gooey and satisfies the craving without derailing all your hard work (training) and good behavior (nutrition).
*Tip: if you have a toaster oven use that instead of the toaster, then you get a nice baked goods smell too

Rachel's Unstuffed Bell Pepper
I made this for dinner last night and it was delicious, low carb, high fiber and only 200 calories per serving:
1lb mild Italian sausage
1-2 julienned green (or any color you like) bell peppers
1 can stewed tomatoes
1 can white beans (mmmm, fiber)
1-2 cups (cooked) brown rice - optional, but we had some left over in the fridge so I threw it in
In a large saute pan, brown the sausage and drain, add all ingredients and let them simmer together until they start smelling delicious. Done. Wasn't that easy?
Roughly 200 calories per 1cup serving. Enjoy!

Good Eats
My favorite new hobby? Making baby food. So simple and a great cost savings. Plus, I know exactly what is in Warren's food... no weird additives. Tonight W had squash-sweet potato-chicken for dinner. Yummy!

Slow Carb Torture... I Mean Diet
For me, trying to lose the baby weight has been challenging to say the least. I'm 4 months post delivery and still have about 10 more pounds to shed. I've resorted to drastic measures, the slow carb diet. Let me run down the six simple rules for you:
1. Eat 30 grams of protein within an hour of waking
2. Nothing White - no bread, rice, pasta, potatoes, tortillas, nothing w/ flour in it
3. No Diary (for a Wisconsin girl this has been particularly painful)
4. Don't drink your calories: no beer, white wine, champagne, fruit juice, soda
5. No Fruit
6. Take one day off per week
Ok, now I dare you to find something to eat that fits the rules. Good luck!

1 lb lean ground beef
2 eggs
French onion soup mix
1 cup slightly mashed, cooked lentils (because we can't use crackers or bread crumbs)
salt, pepper & garlic to taste
Bake @ 375 for 30 minutes
