Why I LOVE Saturday

1.  I don't have to go to work
2.  I get to spend the whole day with Warren & Mike
3.  Slow Carb Diet Cheat Day (Yesssssssssss!  Bring on the carbs!)
4.  I get to drink coffee on the sofa all morning while watching HGTV
5.  I get all my chores and shopping done for the week

And on an unrelated note... don't you hate it when you get all ready to go somewhere, you put the baby in the car seat and then the baby throws-up all over himself and the car seat?  Thank goodness this happened on a Saturday afternoon and not a work day morning!  It was so bad that we had to take the car seat apart and launder it, which put us behind schedule a few hours.  Oh well, who cares?  It's Saturday!

Good Morning

Most mornings by the time I get to work I'm so exhausted that I just want to put my head down on my desk and cry. 
3:00 AM  Wake up to Warren crying; feed him, change him, get him back to sleep
3:30 AM  Crawl back into bed
4:00 AM  Still trying to fall asleep... did Warren just make a noise?  Check on baby.
5:45 AM  Mike's alarm goes off... I can't be bothered now, I'm finally sleeping
6:30 AM  Wake up to the sound of Mike burping a crying baby in the nursery
6:45 AM  Better get my butt out of bed
6:50 AM  Tending to W, who is anxious to see me
7:00 AM  Giving W some naked time to clear up his mild diaper rash (this ointment stinks by the way, literally, like cod liver oil... probably going in the trash later)
7:10 AM  Better get myself ready for work
7:45 AM  I should have left 5 minutes ago, but still have to make "breakfast" (protein shake)
7:50 AM  5 blocks from the house and gas light just came on... can't stop now
7:55 AM  Drop Warren off at daycare
8:00 AM  On my way to the office at last
8:15 AM  At my desk; I need some coffee!  Surprise... break room coffee pot is empty

See what I mean?  TGIF!

Slow Carb Torture... I Mean Diet

For me, trying to lose the baby weight has been challenging to say the least.  I'm 4 months post delivery and still have about 10 more pounds to shed.  I've resorted to drastic measures, the slow carb diet.  Let me run down the six simple rules for you:
1.  Eat 30 grams of protein within an hour of waking
2.  Nothing White - no bread, rice, pasta, potatoes, tortillas, nothing w/ flour in it
3.  No Diary (for a Wisconsin girl this has been particularly painful)
4.  Don't drink your calories: no beer, white wine, champagne, fruit juice, soda
5.  No Fruit
6.  Take one day off per week
Ok, now I dare you to find something to eat that fits the rules.  Good luck! 
Tonight's Burkholder dinner recipe:
Slow Carb Meatloaf:
1 lb lean ground beef
2 eggs
French onion soup mix
1 cup slightly mashed, cooked lentils (because we can't use crackers or bread crumbs)
salt, pepper & garlic to taste
Bake @ 375 for 30 minutes
